co. zaTweet . Starting the meal is a Pink Salmon Breyani Masala with fresh coconut chutney and spiced sheep’s yoghurt, accompanied by Cederberg’s Five Generations Chenin Blanc 2011. Chef Floris’ secondcourse of Rooibos poached chicken supreme, served with roasted cauliflower, grapes, almonds and sweetcorn, is matched with Cederberg Sauvignon Blanc 2013. Prawns poached with butternut, pancetta, cocoa beans and beurre blanc make up the third course, complemented by the Ghost Corner Pinot Noir 2013. Floris Smith’s Venison, glazed with pear and field mushrooms and finished with Brussels sprouts and a dark chocolate espresso crème brûlée, follows and is paired with Cederberg Shiraz 2011. Next up is the dish Brie inspired by Green, served with Ghost Corner Bowline 2013, followed by White chocolate and raspberry bread and butter pudding paired with Cederberg’s Bukettraube. The dinner is taking place on the 25th of April and costs R545 per person, which includes wine, still or sparkling water, and gratuity.
