You may of course grill the chicken on your braai / BBQ as well. Ingredients for marinade. This masala chicken recipe is very special as it was made with my very own Cape Malay Cooking BBQ masala mix
This little recipe came about when I opened the cupboard and added a bit of this and a bit of that to make a marinade for chicken portions and decided it would work well with lamb, pork and beef too

Turn the braai on or place a large griddle pan on high heat, (BBQ is the preferred option). I LOVE peanut butter, it is the most delicious and moreish food, it goes so well on a crispy piece of toast with jam or honey, as a salad dressing and of course as the main ingredient for chicken satay

Deeolan took charge of preparing the steaks, Kajal had prepared a special marinade for the lamb had that on the go, the night before I mixed up a tandoori rub for the chicken, after mixing it with some yoghurt and fresh minced garlic/ ginger it was ready to go on the skewers
Then massage the marinade into the chicken, cover and place in the fringe for at least an hour. I had chicken breasts in the fridge, a bunch of spices and rice in the pantry, so I decided to make some delicious curried rice and chicken

While far from authentically Thai, the coconut and lime marinade does impart a taste of the Orient whilst still being mild enough to appeal to most tastes, making a good mid-week family meal or something slightly different to serve at a braai/BBQ
