  • of garlic, halved and roasted in foil until golden
  • cups Arborio or risotto rice
  • zest
  • and juice of 1 lemon
  • ¼ cup
  • grated gruyère cheese
  • ¼ cup
  • crumbled goat's cheese (optional)
  • chopped parsley
