Ingredients

  • 1 cup red lentils
  • 3 cups diced butternut; peeled and seeds removed
  • 45 ml oil
  • 1 onion; finely chopped
  • 30 ml fresh ginger; finely grated
  • 3 cloves garlic; finely grated
  • 30 ml garam masala
  • 5 ml cumin seeds
  • 5 ml ground turmeric
  • 10 ml ground coriander
  • 1/2 tsp ground peri-peri (optional)
  • 2 cans chopped tomatoes
  • 400 g baby marrows; sliced
  • Salt and pepper
  • Handful of fresh coriander leaves; for topping
  • 2 fresh loaves of white bread; cut into 3–4 pieces each, each piece hollowed out on one side
