  • 160 g sugar 1 vanilla pod 4 egg yolks 2 cups (500ml) cream 1 tsp vanilla extract Instructions Scrape the seeds from the vanilla pod, and add them, together with the pod to a pot with the milk and sugar. Gently heat until the sugar is dissolved, and put aside for 15min to allow the vanilla flavour to infuse into the milk. Separate the eggs, and add a small amount of the warm milk mixture to the egg yolks, mixing in a little at a time, so that they don't cook. Remove the vanilla pod from the milk mixture, and add the egg yolk mixture to the milk. Place the pot back on the stove on a medium heat, and stir until the mixture thickly coats the back of a spoon. Place a separate bowl over a bowl of ice water and add the cream and vanilla extract to it. Place a fine sieve over this bowl, and strain your vanilla custard mixture into the cream. Mix together until the ice cream base has cooled, and then add it to your ice cream machine to churn. 3.2.1311
