Ingredients

  • ½ C flour for dredging
  • 1/4 tsp cayenne pepper or more to taste,
  • Ground black pepper to taste
  • Sea salt to taste
  • 2 ½ lbs boneless lamb shoulder, cut into 1 – 2 inch pieces
  • ¼ – ½ c olive oil for sauteing
  • 3 – 4 C vegetable stock
  • ½ – ¾ C dry white wine
  • 2 large carrots, cut into bite-size pieces
  • 1 large onion cut into bite-size pieces
  • 1 large stalk celery, cut into bite-size pieces
  • 4 medium cloves garlic, peeled and chopped (or more to taste)
  • 5 medium red new potatoes, unpeeled, and cut into bite-size pieces
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 Bay Leaf
  • 2 C of mustard greens, chopped into bite-size pieces and packed down.
