The perfect combination of spinachandfeta in a light crispy crust makes this quiche an excellent picnic lunch as it can be prepared the day before and served either warmed ar cold
Add bread and bacon to spinach with oil mixture and sprinkle with Feta or Parmesan. After all the holiday overindulging, I bet most of us are looking for light and easy meals like a salad
Most quiches call for Swiss cheese but I typically use whatever type of cheese I have on hand. Gently pat down pie crust around the base and sides of the pie plate, cutting off any excess with a knife (see picture below)
Once a week during lunchtime, the girls in the office would go to Fournos Bakery on Jan Smuts Ave (yes, I very briefly lived in Johannesburg) and swoon before the warm loaves of rye bread, freshly baked chicken pies andquiches, and flaky chocolate croissants
Water with some water and butter until soft. Add a good amount of spinache in each. Make sure the water has dried up add the fresh cream allow to simmer add the flour to thicken and remove from heat
