Glutenfree, Soup, Veggies Tagged. On a lighter side of a heavy winter soup is my version of a chicken and veggie soup with noodles made from zucchini hence the name “Zoodles”
In another dish put the flour that you’ll use to cover the chicken, season it with salt and pepper. Put a frying pan on the stove with oil for frying (you can use olive oil if you prefer, but this will get burned faster, resulting not so good for frying the whole chicken)
I mix I bottle of BBQ sauce you can use your favourite brand I use Jimmy’s sauce. One of the easiest I take about 24 chicken drummettes add to slowcooker then. Cook on slow for about 4 hours you can reduce the sauce on the stove top for that thicker sticky wings sauce
Place the raw chicken in the base of your crock and top with the mushrooms and chopped pepper. Pour the sauce over the chicken and veggies making sure it sinks down to the bottom and around the edges to prevent burning
These need to be served immediately and as much as I won’t really call them soufflés they are light, do rise up and slowly start collapsing once you have removed them from the oven
