Ingredients

  • 250 ml dried black-eyed beans
  • 2 T clarified butter (or duck fat)
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 1 red chilli, finely chopped
  • 3 garlic cloves, finely chopped
  • 2 T curry powder
  • 1 t coriander seeds
  • 1 t cumin seeds
  • 3 curry leaves
  • 1 t cardamom, crushed
  • 375 ml warm chicken, beef or lamb stock
