One of my favourite dishes to make with Butternut, is SOUP. We are so very fortunate, here in South Africa, to be able to get fresh Butternut Squashes throughout the year
Return the soup to the pot and stir in a little cream,if using,*(just as good without any. 1 Medium/Large Butternut,chopped into chunks. 2- Add the butternut,potatoes,paprika and mix through well, then and the water/stock. 3- Scoop out the softened vegetables and add into a food processor/blender, using some of the liquid from above *(the more liquid added to processor/blender, the thinner the soup consistency at the end). 1 Medium/Large Butternut,chopped into chunks
Add the roasted tomatoes and the juice surrounding them to a blender and blend until smooth. You don’t have to remove the skins but the soup will be more smooth if you do
cut butternut into chuncks. remove butternut and onion with slotted spoon, place in blender and puree. 1 butternut ( 2-3 pounds). add butternut and stock, simmer and cook till butternut is tender – about 15 – 20 minutes.
