Ingredients

  • about 5 small marrows or any shape
  • about 5 bell peppers of any color
  • a good handful of fresh spinach
  • a good handful of red cabbage
  • as much fresh chilies as you can handle
  • 3 sticks of fresh lemon grass
  • a thumb thick piece of fresh ginger
  • about 3 gloves of garlic
  • 2 packets of good quality red curry paste
  • 1,5 T good quality Asian fish sauce
  • 500 ml good quality coconut milk
  • 5 – 6 spring onions
  • a good handful of unsalted cashew nuts
  • 2 c of Jasmine rice
  • 2,5 T sesame oil from Crede
  • 2,5 T coconut oil from Crede
