  • 1 onion, chopped
  • 1 green pepper, chopped 1 yellow pepper, chopped 1 medium brinjal, chopped 1 cup hubbard squash (or any squash really) 4 tomatoes, chopped Garlic Oil 1tsp Thyme About 3 Basil Leaves chopped Instructions Heat the oil and fry the onions and garlic until the onions are almost cooked. Add the brinjal, thyme and squash and fry for 5 minutes Add the rest of the ingredients and fry for a further 5 minutes, stirring to combine well. Turn heat off, add the basil leaves and leave on the stove for a further 5 minutes. Notes I added some chilli relish and tomato relish that my mom made. These are both optional though. 3.5.3208
