This is my favourite Carrot Cake recipe because it is flop proof and super easy. Whisk eggs in the bowl of a stand mixer and add sugar slowly while the motor is running

Its more an “idea” than a recipe, and if ever there was an idiot proof dessert, this is it. This has endless possibilities, its mostly just a quick dessert when you run out or haven’t the time or energy to pull together a whole elaborate dessert for a dinner party
