Ingredients

  • 3 kg king prawns, deveined with shells and tails
  • 1 bottle of Portuguese peri-peri sauce (find it at your local fish monger)
  • Olive oil
  • Sea salt
  •  
  • For the lemon garlic butter
  • 250 g unsalted butter, cut into cubes
  • 7 cloves of garlic, crushed
  • 1 handful of fresh parsley, chopped
  • Juice of 2 lemons
  • Sea salt

  • For the Tzatziki
  • 2 cups plain Greek yogurt
  • 1 cup cucumber, diced
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves, minced
  • 2 tablespoons finely chopped fresh parsely
  • Salt and pepper, to taste
  • Served along with my Dad’s Amazing spatchcock chicken, yellow rice, salsa.
