To make dud free pancakes you have to have a really hot non stick pan. This is not the American pancake, this is a traditional South African pancake or pannekoek (the real name, Dutch)
additional butter and maple syrup for serving. Pancake will be very hot, so be careful. Add remaining ingredients and stir briskly with a fork until all is well combined
Just like the name of this recipe, this meal is a mouthful, and will keep you satisfied and full. Drizzle with a little bit of balsamic reduction for a little bit of pizazz
So, as Fairtrade Fortnight approaches and as we are in the middle of Breakfast Week, why not rustle up a batch of these pancakestoday – you can serve them with the fried bananas or with just butter and syrup, or other fruits such as blueberries, strawberries and raspberries
Spoon halve of it into the batter and whisk it in, then pour the rest into a bowl and use it to grease the pan, using a piece of kitchen paper to smear it round before you make each pancake

Keep a close eye on it as I noticed that this side burnt a lot easier than the first side. Relax for a few minutes while the batter firms up – when the wobbly softness goes, pop a spatula under an edge to see how its coming along underneath
