Ingredients

  • 1 whole free-range chicken
  • 2 large carrots, roughly chopped
  • 2 celery sticks, roughly chopped
  • 1 whole hand of ginger, roughly chopped
  • 5 garlic cloves, roughly chopped
  • 2 red onions, roughly chopped
  • 2 liters water
  • 1 tsp whole black pepper corns
  • 1 star anise
  • 2 red chilies
  • 1 tbsp coconut oil
  • 2 red onions, sliced
  • 4 garlic cloves, crushed
  • 5 cm thumb of ginger, peeled and chopped
  • 2 red chilies, chopped
  • 4 tbsp miso paste
  • 2 tbsp fish sauce
  • 2 tbsp light soya sauce
  • The juice and zest of 2 limes
  • 1 tsp ground black pepper
  • 1 bag of baby spinach
  • 1 bag pre-cut julienned carrots
  • 100 g bean sprouts
  • Fresh coriander
