I saw something on a Jamie Oliver show last week (I’ve never been the biggest Jamie fan but this looked so good that I decided to try it) which I adapted a bit to come up with this deliciously fresh & light but tasty Mediterranean vegetable salad
One of the meals she made me was a chicken lasagne. Chicken and Vegetable Lasagne Print Serves. Skip ahead to a few weeks ago, now a good 5 years on, she was tidying out her recipe files (and ever vigilant looking for the famous chicken lasagne) she found it. 4 Ingredients 250g minced chicken breasts non-stick cooking spray 1 clove garlic, crushed ½ onion, chopped 1 zucchini, chopped 1 celery stick, chopped 1 carrot, chopped 150g butternut, diced 1 x 400g can tomatoes, chopped 1 sprig fresh thyme 1 bay leaf ¼ cup white wine 1 tablespoon tomato paste 1 tablespoon fresh basil, chopped 50g baby spinach 250g fat-free cottage cheese 225g ricotta 30ml fat-free milk ¼ teaspoon ground nutmeg 40ml freshly grated Parmesan 150g instant lasagne sheets salt, to taste Instructions Preheat the oven to 180°C. 150g instant lasagne sheets salt, to taste
Sauté until the onions are transparent and the vegetables are soft. It may not be considered the most exciting meal these days, but lasagne will forever be a dish close to my heart
Once the vegetables are lightly cooked and all liquid has evaporated from the frying pan add the tomato sauce and cream to the vegetables, stir thoroughly and heat through for about 5 minutes

I’ve topped this bowl with the tofu in miso and tahini sauce to make it a complete meal and used the left over sauce to cover the roast vegetables, adding not only flavour but all the goodness contained in miso (probiotics amongst other things) and tahini (calcium rich)
