The sundried tomatoes give it quite a strong flavour, which I really like and I hope you do too. It’s also quick and easy to make which is always a plus
Remove the balls from the pan and add the mushrooms, tomatoesand garlic slices and fry them over high heat for a minute or two until the tomatoes start to burst and the mushroom release their juices
Add all the other ingredients except the sundried tomatoesand blend to make a thick sauce. Smooth and creamy, the flavour is subtle but still yummy, of course
Once everything has softened, add the tinned tomatoes, sugar and a large grind of black pepper. This dish is super easy to make and you can use this sauce for absolutely everything

Season to taste and place the meatballs back in the sauce. Roll into small balls. And make plenty, as there are always people wanting an extra meatball or two or you could freeze any leftovers
We very like tomatoes especially when they are fresh and ecological. Now all ingridients stew into water evaporate and the sauce would be thick and smooth
This is an adaption of the North Indian way of preparing them with a rich tomatosauce normally with yoghurt but to make it lighter and easier to digest, I always add coconut milk instead
