Ingredients

  • 40 g cocoa powder
  • 60 ml boiling water
  • 320 g cake flour, sifted
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 400 g caster sugar
  • 4 XL eggs
  • 1 tsp vanilla extract
  • 250 ml sour cream
  • 250 ml vegetable oil (canola)
  • 100 g frozen raspberries ( a mix of pieces and whole raspberries are ideal)
  • Bake at 180'C for approx. 70 -80 minutes or until a cake tester inserted comes out clean.
  • (If the outside of the cake is browning too fast, cover with foil and continue to bake at a slightly lower temperature; extend the baking time as necessary).
