Ingredients

  • 15 minutes
  • 45 minutes
  • 250 ml (1/2 cup brown or white sugar)
  • 1 egg 15 ml (2 T) soft butter (plus extra for greasing)
  • 15 ml (2 T) smooth apricot jam
  • 250 ml (1 cup) cake flour
  • 10 ml (2 t) bicarbonate of soda
  • ¼ t salt
  • 250 ml (1 cup) milk
  • 10 ml (2 t) wine vinegar
  • 10 ml (2 t) vanilla essence
  • ½ x 400g tin evaporated milk
  • 100 g unsalted butter
  • 125 ml (1 cup) brown, white or treacle sugar
  • 60 ml (1/4 cup) hot water
