  • BASIC PASTA DOUGH: 250g “00” flour
  • 50 g durum wheat semolina
  • generous pinch of salt
  • 3 eggs
  • 1 beaten egg, for brushing
  • FILLING: 285g bottle of artichokes
  • 250 g ricotta cheese
  • 80 ml mascarpone cheese
  • juice and rind of 1 lemon
  • 60 ml chopped basil
  • Salt and black pepper
  • 1 egg, beaten
  • NAPOLITANA SAUCE: 2 x 400g tins of chopped tomatoes
  • 45 ml olive oil
  • 5 ml chopped garlic
  • 125 ml fresh basil
  • 5 ml sugar
  • salt and pepper
  • 60 ml cream
