  • 80 g (⅔ cup) almond meal
  • 8 eggs, separated
  • 165 g (¾ cup) caster sugar
  • 200 ml thickened cream
  • ¼ tsp vanilla extract
  • 250 g mascarpone
  • 1 cuplemon curd or use good-quality store-bought lemon curd
  • Lemon syrup
  • 400 g caster sugar
  • 2 lemons, thinly sliced
