I had planned to outsource Handsome’s cake this year given his big “Smurf cake with Spiderman and a fire truck” demand that I mentioned, but it turned out, as things often do, that I ended up needing tomake it myself
I mixed a few drops of gel food colouring into vanilla cake batter tomake the rainbow layers. Crisp, white meringues are one my favourite things tomake, but a few weeks ago I tried something a little different by adding some colours to the mix
You may need to melt more candy melts depending on how thick your coating ends up. You will want to do this quickly in order tomake sure to reduce any excess of the candy coating off before it starts to set

Once the cakes are done and cooled completely sandwich together with half of the icing. Add the sugar and the butter to a bowl and whisk until very fluffy and a pale cream
Sponge cake with buttercream. 1 cup castor sugar. 1 cup + 2 tablespoon cake flour. 1) Sift dry ingredients together. 2) Make a well in the center and add egg yolks. 3) Add oil and water to dry ingredients. 4) Beat egg whites till stiff and add to flour mix. 5) Pour batter into prepared pans and bake @ 180° for 30-35. 1 cup castor sugar. 2 tablespoon cake flour
