Here’s to new week’s resolutions. By Monday evening most of these have blown out the window, but today at least I know I’ve got a healthy dinner sorted with this lentil salad with bacon, feta and mint
Add baconand allow fat to fry out before stirring. After all the holiday overindulging, I bet most of us are looking for light and easy meals like a salad
Sprinkle the baconand Parmesan shavings on top and serve. Place the beetroot quarters in a roasting pan, mix the olive oil, balsamic vinegar, brown sugar and chillies and pour it over the beetroot
