Ingredients

  • 2 Tbsp olive oil
  • Aromatics: 1 cinnamon stick, 2 bay leaves, ½ tsp fennel seeds
  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely minced
  • 1 Tbsp fresh ginger, minced
  • 2 green chillies, sliced lengthwise
  • 1 tsp fresh thyme
  • 5 curry leaves
  • 2 Tbsp medium curry powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 400 g beef fillet, cubed
  • 250 ml tomato puree
  • 250 g chickpeas, cooked
  • Fresh coriander, chopped
  • Salt to taste
