  • 50 g flaked almonds
  • 3 large onions, thinly sliced
  • 15 ml vegetable oil
  • 1 kg leg of lamb cubes
  • 25 g butter or ghee
  • 20 ml chopped ginger
  • 4 garlic cloves, crushed
  • 1 red chilli, seeded and chopped
  • 10 ml ground coriander
  • 10 ml ground cumin
  • 10 ml turmeric
  • 15 ml garam masala
  • 10 ml salt
  • 375 ml Greek yoghurt
  • 125 ml chopped coriander
  • 125 ml chopped mint
  • 250 ml water
  • a pinch of saffron soaked in a little warm milk
  • 500 ml basmati rice, cooked until just tender
  • extra coriander for serving
