Ingredients

  • 2 eggs, whisked together with 1 tablespoon water and a pinch of salt
  • 2 cups cooked basmati or jasmine rice
  • 2 tablespoon vegetable oil
  • 2 teaspoons sesame oil
  • 1 heaped teaspoon Chinese five-spice powder
  • 6 chicken thigh fillets, cut into thin strips
  • 1 red pepper, julienned, or a combination of red and yellow
  • 1 small shallot
  • a pinch of red chilli flakes
  • a thumb sized knob of ginger, grated
  • 3 tablespoons low sodium soy sauce
  • 2 limes
  • 3 scallions, finely diced
  • toasted black sesame seeds
  • fresh coriander, to finish
