  • 2 brown onions, chopped
  • 4 garlic cloves, crushed
  • 3 tsp ground coriander
  • 2 tsp cumin
  • 1 tsp curry powder (masala)
  • 1 tsp black mustard seeds
  • 1/2 tsp ground cardamom
  • 1 tsp turmeric
  • 1 tin whole Italian tomatoes
  • 1 sachet tomato puree
  • 1 cup chicken stock
  • 1 tsp sugar
  • Kosher Salt
  • Black pepper
  • 1 red chili, chopped
  • 4 sweet potatoes
  • Fresh flat leaf parsley
