Ingredients

  • 1/4 cup olive oil
  • 2/4 cup sugar
  • 10 ml vanilla essence
  • 2 ml almond essence (can be omitted, if not available)
  • 2 eggs
  • 1 3/4 cups flour
  • 1 tsp baking powder
  • 1/2 cup dried cranberries, roughly chopped
  • 1 1/2 cups unsalted pistachio nuts, shelled and chopped
