Ingredients

  • 3 egg whites (100g-110g), at room temp. Aged for 2-3 days.
  • 2 tbs caster sugar
  • 1/2 tsp cream of tartar
  • 200 g icing sugar
  • 125 g ground almonds/ almond meal
  • 1 tbs instant coffee granules (use good quality freeze dried coffee), dissolved in 20ml boiling water.
  • Bake at 150'C for 15-16 minutes.
  • Check that they're not browning as the end of the baking time approaches.
  • Dark chocolate ganache
  • 200 g dark chocolate, cut into small, even sized pieces.
  • 100 ml cream ( 35-40% fat content)
