Ingredients

  • 300 g block Careme Dark Chocolate Shortcrust Pastry bought or home made (see recipe below)
  • 300 ml thickened cream
  • 150 ml pure (thin) cream
  • 2 tablespoons caster sugar
  • 200 g dark chocolate, finely chopped
  • 100 g milk chocolate, finely chopped
  • Seeds of 10 cardamom pods
  • 1/2 teaspoon chilli powder
  • 3 eggs, lightly beaten
  • 1 tablespoon glucose syrup (see notes)
  • 1 cup (220g) caster sugar
  • 2 long red chillies, seeds removed, halved lengthways
  • 2 tbsp cocoa powder
  • 2 tbsp icing sugar
  • 200 g (1⅓ cups) plain flour
  • 1 good pinch salt
  • 150 g chilled unsalted butter, diced
  • 2-2½ tbsp iced water
