WITHOUT THE FRILLS. Nothing Beats a Simple and delicious Sponge cake. This is exactly the type of cake I would reach for at a tea table, and today Aunty Fawzia Safla was kind enough to share her Pic and recipe for a sponge cake

Madeira Cake (Blue Ribbon Recipe) 125g Margarine (1⁄2 cup). 500ml Cake Flour (2 Cups). ~Cream Margarine and Sugar until light and fluffy ~Beat in the eggs,Lemon Rind and Vanilla essence ~Sift flour and Baking powder together and mix into the creamed mixture alternately with the milk ~Pour into a greased 23cm (9inch) loaf tin and bake at 180 degrees (350 F) for ± 1hour *. Cherry Cake Add 250ml (1Cup) cherries, chopped to the cake mixture and fold in. I leave out the Lemon Rinds and substitute with 1⁄2 cap of Lemon Essence

2 cups snowflake cake flour. First 5 ingredients mix and crumb with your fingers. Pat with oil , cover and allow to rest for 30 minutes to an hour. Take water in your hand and pat 1 side with eater and place on a hot tawa allow to cook and water the side that's facing you before you turn. Spread garlic butter both sides allow to cook and serve immediately 2 cups snowflake cake flour. Pat with oil , cover and allow to rest for 30 minutes to an hour
