Ingredients

  • 450 g free-range chicken fillets
  • 1 clove of garlic, peeled
  • 4 tbsp grated Parmesan
  • 1 large free-range egg
  • Olive oil
  • 1 handful of fresh flat-leaf parsley, chopped to serve
  • 1 handful of fresh basil, chopped to serve
  • Sea salt and black pepper
  • 2 tbsp olive oil
  • 1 large brown onion, chopped
  • 4 cloves of garlic, peeled and crushed
  • 2 x 400 g tins of chopped tomatoes
  • 1 tsp sugar, optional
  • 2 tbsp good quality balsamic vinegar
  • 1 handful basil, torn
  • Chicken stock
