  • 500 g chicken fillets, cubed
  • 15 ml dark soy sauce
  • 15 ml Shaoxing wine or sherry
  • 10 ml sugar
  • 10 ml sesame oil
  • 5 ml cornflour
  • 5 ml chopped garlic
  • 5 ml grated ginger
  • STIR FRY: 15ml dark soy sauce
  • 15 ml mirin
  • 15 ml white wine vinegar
  • 60 ml chicken stock
  • 30 ml brown sugar
  • 5 ml sesame oil
  • 10 ml cornflour
  • 30 ml peanut oil
  • 5 ml chopped garlic
  • 5 ml grated ginger
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 2 stalks of celery, chopped
  • 1 red onion, diced
  • 125 ml peanuts, roasted
  • 1 red chilli, seeded and chopped
  • 1 punnet baby pak choi, leaves separated
  • salt and pepper
  • spring onions, sliced, for garnish
  • Basmati rice, for serving
