Place a pot of water on the stoveto boil and add a pinch of salt , once boiling add the clean and trimmed head of cauliflower and cook until very soft (almost falling apart)

You can either use a cheese grater or your foodprocessor, even a knife and some added effort can do the trick into chopping the raw cauliflower up in smaller pieces to resemble “rice like” texture

Ive tried lots of dough recipes but this one works best for a nice crispy base ( not a lover of deep pan/dish bases but the dough here is light and springy so would work well too)

If I want them to eat it without any hassles, I have make them with some twist every time. Cut off the top stem and bottom tail and make a cross slit halfway through from toptobottom do not cut them into two halves as we need to fill in the stuffing inside
