Ingredients

  • 1 cup Almond Meal
  • ½ cup Coconut Flour
  • 2-3 Carrots, peeled & grated
  • ¼ cup Desiccated Coconut
  • 1 tsp Baking Powder
  • 1 tbsp Cinnamon
  • 1 tsp Ginger Powder
  • 1 tsp Vanilla Powder
  • 1 tbsp Flaxseed Meal
  • ¼ cup Extra Virgin Coconut Oil
  • ¼ cup Coconut Sugar or sugar of choice
  • 4-5 tbsp Coconut Milk or milk of choice
  • 10 muffins from this mixture. The tray I have only holds 6, so I did two rounds in the oven. Allow to bake from 30-35 until golden brown.
