Ingredients

  • 2 cups cake flour
  • 2 tsp bicarb. of soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 1 cup light brown sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 2 cups shredded carrots
  • 1 tsp vanilla extract
  • 1 cup shredded coconut
  • 1 cup chopped walnuts or pecan nuts
  • 1 can crushed pineapple, discard excess juice
  • dates
  • 1/2 cup of chopped pitted dates will do
  • 1/4 cup water
  • 1 cup sugar
  • 1/3 cup butter
  • 1/2 cup fresh cream
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 250 g Low fat plain cream cheese
  • 1/4 cup chilled salted caramel
