  • 1 cup Spekko parboiled long grain rice
  • 2 Tbsp. olive oil
  • 1 Tbsp. butter
  • 2 leeks, washed and finely sliced
  • 4 sprigs thyme, pulled from the stalk
  • 2 cups butternut puree
  • Salt and black pepper to taste
  • 2 cups milk
  • ⅓ cup butter
  • ⅓ cup flour
  • 2 tsp Dijon mustard
  • 2 cups grated cheddar cheese
  • 7 eggs, separated
