  • 225 g chorizo, sliced
  • 1 large onion, chopped
  • 15 ml chopped garlic
  • 1 red chilli, seeded and chopped
  • 400 g tin of chopped tomatoes
  • 250 ml chicken stock
  • 400 g tin of butter beans, drained and rinsed
  • a few sprigs of thyme
  • 15 ml grated lemon rind
  • Salt and pepper
