So here’s the salad that goes with that flavoursome, slightly tart saladdressing that I posted. It’s a nice substantial salad that will leave you feeling satisfied
Recipe for potato saladwith avo-nnaise. " Blogger Challenge, I thought I’d try making a dressing for potato salad that didn’t have any mayonnaise at all
Blanch the broccoli florets, pat dry and place in a large plastic or glass bowl. Serves 6 600 g broccoli florets500 g button mushrooms, halved if necessary300 g baby marrows, sliced in 1 cm slices250 ml dry white wine45 ml white wine vinegar30 ml white sugar90 ml olive oil10 ml crushed garlic65 ml whole grain mustard30 ml grated lemon rindsalt and freshly-milled black pepperchopped parsley and chives
Finish withsalad leaves, Parmesan, and the dressing. Meanwhile, make the dressing by whisking together the mustard, vinegar, and olive oil with a pinch of salt and pepper
Just before serving pour over the dressing and sprinkle with feta. Combine the broccoli, snap peas and peas with all the remaining ingredients except the feta and toss to combine
