place the cooked beetroot , place the remaining half avo , onions and more pesto if you like. 2 beetroot. 1⁄4 cup Ina parmans balsamic salad dressing. Boil the beetroot in salt water and 3 tablespoon vinegar for about 20 minutes. In a small pan add very little olive oil , place boiled beetroot in the pan and grill for 10 minutes , toss them around. add the balsamic salad dressing ,and sugar and simmer with beetroot for 2 minutes remove from pan and set aside. 2 beetroot. 1⁄4 cup Ina parmans balsamic salad dressing
Put the baby beetroots or beetroot wedges into a frying pan with the balsamic vinegar and honey. Heat over a medium to high heat, stirring frequently, until the beetroots are nicely glazed

Sorry to all you lovely folk in the northern hemisphere, its going to be a while before you can enjoy this lovely salad but can tell you it is well worth the wait
As a rule, I would say that we stick to salads alongside grilled meat or chicken. When it comes to salads though, nothing can draw tears from my eyes faster than what I like to call the “Restaurant Greek Salad”
