place the cooked beetroot , place the remaining half avo , onions and more pesto if you like. in a small bowl cube the avos squeeze the half a lemon and add salt to the bowl and give it a toss first

What I do really love about summer are the seasonal fruits and the fabulous salads/side. I like to cut the bottoms of the Baby Gem Lettuces and then lay them out like a rosette in individual bowls (see my image)
Arrange the lettuce on a platter top with cucumber, roasted butternut & mushroom (I roasted in butter with some crushed chilli and cinnamon), avo and tomato
