Ingredients

  • 500 g beetroot bulbs
  • 300 ml boiling water
  • 1 onion, chopped
  • 500 ml vegetable or chicken stock
  • handful of chives and mint, roughly chopped
  • 250 ml cream or Greek yoghurt
  • salt and freshly ground black pepper
  • 100 g smooth cottage cheese or goat’s cheese
  • Alternatively cook beetroot with 100 ml water in an AMC 20 cm High for 35 – 40 minutes or until tender.
  • Use a stick blender instead of a food processor.
