  • 250 ml beer
  • 200 g self raising
  • salt and pepper to taste
  • 5 ml Paprika
  • Fresh, chopped corriander
  • 4 pieces baby hake (butterflied and deboned)

The darker the beer, the darker the overall result. Guisness tends to add a slight nutty taste, but any beer is fine.

    1. Flour hake. Set aside
    2. Mix flour beer and seasoning
    3. Heat 2cm oil in pan to 180°c
    4. Dip fish in batter.
    5. Deep fry until light brown on both sides.
