Heat slowcooker on low setting. Transfer to slowcooker. To the slowcooker, add Organic Beef Stock, bacon, tomatoes, bell peppers, mushrooms, celery, carrot, onion, garlic, tomato paste, Worcestershire sauce, sea salt, black pepper, garlic powder, onion powder, and dried oregano
Roughly layer the potatoes and onions in a roasting tray and put the lamb on top, skin-side up. Mix the potatoes, onions and thyme leaves together in a bowl and season
Like any one-pot meal, it concentrates all the lovely juices and flavours and is also a great way of cooking cheaper cuts of meat, such as brisket or chuck
You can also use this time to make the mashed potatoes to serve with the pork shanks. (Please see my roast lamb recipe for more details on how to do this)
Serve it with mashed potatoes or pap. Now you are ready for the slowcooker. In a large pot on a medium to high heat, add the oil and onions, cook stirring every now and then for about 5 minutes or until the onions begin to brown on the edges. Toss all from the pot into the slowcooker, crumble up the beef stock, add the soup powder, and 1/2 water, put the lid on and cook on low for 10 to 12 hours. Once cooked, switch off your slowcooker until about 2 to 3 hours before your meal
