Ingredients

  • 400 g potato
  • 160 g white
  • 1 whole egg
  • 120 g finely grated parmesan cheese
  • 4 pieces
  • 1 red onion, chopped fine
  • 30 ml unsalted butter
  • 30 ml brown sugar
  • 20 ml balsamic vinegar
  • 30 ml red wine
  • salt and freshly ground black pepper
  • 100 g pine nuts, toasted with olive oil and maldon sea salt
  • 20 ml olive oil
  • blend the nuts in a food processor, slowly adding the oil until the mixture becomes smooth
