Put the apples in a pie dish sprinkle with the light brown sugar and raisins. Add the butter to flour mixture and rub the butter until a crumble mixture is formed
½ tsp cardamom – I omitted this as I only have pods. I adjusted the recipe slightly by increasing the spice quantities and placing the entire crumble on top of the apples instead of mixing a portion of it in with the apples as with the original recipe in the book, The Cake the Buddha Ate
Mix cinnamon and sugar and sprinkle over the apple slices (be generous. This is the type of dessert that you can serve when you actually forgot about dessert and only thought about it for the first time half way through main course
cut appels in half and into thin slices ( i did not cook appels and put them into pie in oven as is, this leaves them with a little crunch – not soft like pie appels )
For the filling, peel, core and slice the apples. With this recipe, add the blackberries when you start to cook the apples, so you achieve a smooth, thick compote consistency
Since the plum, appleand cinnamon combination turned out so well in the sweet quiche recipe, I went back to that and, though I went looking for variations and found Jeanne’s grown up spicy plum crumble, I ended up just going the child-friendly cinnamon spice route

The cake is best stored in a cool place if it’s not scoffed in one sitting, as the fresh fruit filling needs to be kept away from heat – my pantry was the perfect place, but the fridge is also suitable as long as you take the cake out half an hour before serving
